With the heat of this summer, I’ve been looking for easy ways to cook up tasty meals that are also healthy!
One thing I’d been craving were tacos. I really wanted to find a way to make a healthy version of tacos so I came up with this idea (which I did promise I would share with you!).
The easiest part? I bought the pulled pork ready-made! At our local Zehrs store, you can buy ready-made pulled pork. It is reasonably priced, has amazing flavour and means that cooking is kept at a minimum (win/win/win!).
Pulled Pork Shell-Free Taco
Ingredients:
4 oz. BBQ Pulled Pork (previously made)
1 large tomato, diced
1 oz low-fat mozzarella cheese (grated)
2 tbsp. fat free sour cream
1 cup romaine lettuce, shredded
Directions:
In a frying pan, combine the pulled pork and the tomato. Cook over medium heat and stir until warm.
Sprinkle low-fat mozzarella cheese on top and cover until melted.
Place mixture on plate over lettuce and top with fat free sour cream.
Yield: 1 large serving
Calories: Varies depending on bbq sauce and pork cut used (the meal in the photo was under 400 calories)
