Lazy Chicken Stew (Recipe)

These days, my biggest challenges are battling the heat and making meals that are healthy!

So why am I calling this Lazy Chicken Stew? Well, the other day it was really hot and I didn’t want to cook. So I picked up a whole cooked chicken from a local grocery store. Normally, the white meat gets eaten really quickly but the struggle is to find something to do with the dark meat. With this stew, I was able to use up all of the extra chicken (so there was no waste!) and produce a hearty and healthy meal that has amazing flavour and still has a reasonable amount of calories!

Lazy Chicken Stew

Ingredients
1 tbsp margarine or butter (I used margarine)
1 medium white onion, sliced
1 tsp. minced garlic
4 stalks celery, rough chopped
1/2 lb. baby carrots, rough chopped
4-5 cups water
6 ounces chicken (dark and light meat)
6 tbsp Bisto Chicken Gravy Granules*
1 cup frozen peas 140 (155)
1/2 yellow zucchini
1/2 lb mushrooms, sliced
3 tbsp hoisin sauce 150
pepper to taste (you can omit hoisin sauce and add salt to taste as well)

Directions
1. In a large pot, melt margarine over medium-high heat and add onions. Turn down heat to medium after a couple of minutes and stir continuously until onions are softened. Add minced garlic, celery and baby carrots and continue to stir.


2. Add 2 cups of water and increase to medium-high until the mixture starts to boil then return to medium heat. Continue stirring.
3. In a kettle, boil 3 cups of water then place water in a large bowl. Add Bisto Gravy and stirring until thoroughly combined (gravy should be very thick – add more Bisto if needed). Add hoisin sauce to gravy and mix.


4. Pour gravy/hoisin mixture into pot and stir until thoroughly combined. Add chicken, peas, zucchini and mushrooms and stir. Cover and allow to cook for 10-15 minutes.

Remove lid and stir then move pot off element. Return cover and leave for 30 minutes. Add salt and pepper to taste.

Yield: 6-8 servings
Approximate Calories: 200 calories (based on 6 servings)
Suggestions: Serve over a baked potato (it tastes amazingly good!)

*I know some readers have asked me where I find Bisto Gravy Granules. They have a great amount of flavour and only 20 calories per 1/2 tbsp granules! I pick mine up at Zehrs (you can also find them in some British Shops).*
