Hellmann’s Mayonnaise Turns 100! – Chocolate Cupcakes with Caramel Frosting Recipe

Growing up, I’d never tried mayonnaise – at least I thought I never had. Looking back, I remember going to my Nana’s house and always thinking that she made much better tuna salad and egg salad sandwiches than my mom! Now, in retrospect, I remember seeing the Hellmann’s mayonnaise in the fridge and it all made sense! Then, when I went to university, I started using mayonnaise and quickly realized that all brands are not created equal! For me, it had to be Hellmann’s mayonnaise and that has never changed! One thing I appreciate about Hellmann’s mayonnaise is that is incredibly diverse! And, as they mark their 100th birthday, Hellmann’s has designed some truly amazing recipes! One of my favourites is a recipe for Chocolate Cupcakes with Caramel Frosting! Try it yourself and you’ll see why!

    Isnt it funny how mayo can add that extra SOMETHING to a cake? It seems like an unlikely ingredient, but it certainly adds a real moistness to the cake! Thank you for your recipe – that icing sounds divine!

  4. I have never used mayo for baking. I’ve seen recipes that used it but I’ve always been a little scared to try it. I WILL try this one! Pinning it right now! lol

    my mouth is watering already 🙂 I’ve never heard of putting salt in to make caramel, nor of mayonnaise in a cake either. I will definitely be trying these out, they look fantastic.

    This brings back memories of my childhood. My mother always made a mayonnaise cake, she also made a cake that had a can of tomato soup in it too. They were both so moist and delicious.
